Classical / Single Hors d'oeuvres 

It is called as single hors d’ oeuvres because these are served alone ( by their own) it is even termed as deluxe hors d’ oeuvre due to its expensiveness and  are also widely called as Classical hors d’ oeuvres because they have – 
 set accompaniments
 set covers and 
 set standards of service.
We cannot modify or alter any of these.

A few examples of classical hors d’ oeuvres are-, Caviar , Pate de foie gras, Les huître etc.


Hors d'oeuvre Varies / Substitute 

These are served as a substitute of Classical hors d’ oeuvres hence called as Hors d’ Oeuvres Substitute & since these are always served in a combination (combination of various ingredients) called as hors d’ oeuvres Varies.

These are generally cold in nature & served on tray or trolley.

A few examples of hors d’ oeuvres substitutes are Russian salad, Niçoise salad, Jus de tomate etc.
